This quick and easy baked pudding can be a weekday treat or the best part of your next dinner party.

Ingredients
3 cups
Saskatoons
1/2 Lemon
Juiced
1/3 cup
granulated sugar
1 tbsp
flour
1/2 cup
butter
1/2 cup
granulated sugar

egg
1/2 tsp
vanilla
1/2 tsp
almond extract
1 cup
sifted flour
1 tsp
baking powder
1/4 tsp
salt
1/2 cup

Directions

  1. Preheat oven to 375 F (350 F if using a Pyrex baking dish). Butter an 8 x 8-inch cake pan.
  2. Place saskatoons in bottom of pan. Squeeze lemon juice over berries. Combine 1/3 cup sugar with flour and sprinkle over top. Set aside.
  3. In mixing bowl, cream butter and sugar. Beat in egg, vanilla and almond extract until mixture is light and fluffy.
  4. Stir together flour, baking powder and salt.
  5. Stir into batter alternately with milk, ending with flour mixture. Spread batter over berries.
  6. Bake for about 30-35 minutes or until top is golden and the pudding tests done.

Serve warm with cream or scoop of ice cream.
