This quick and easy baked pudding can be a weekday treat or the best part of your next dinner party.

Directions
- Preheat oven to 375 F (350 F if using a Pyrex baking dish). Butter an 8 x 8-inch cake pan.
- Place saskatoons in bottom of pan. Squeeze lemon juice over berries. Combine 1/3 cup sugar with flour and sprinkle over top. Set aside.
- In mixing bowl, cream butter and sugar. Beat in egg, vanilla and almond extract until mixture is light and fluffy.
- Stir together flour, baking powder and salt.
- Stir into batter alternately with milk, ending with flour mixture. Spread batter over berries.
- Bake for about 30-35 minutes or until top is golden and the pudding tests done.
Serve warm with cream or scoop of ice cream.
