Oh man, my mom made these and we couldn't hold my step-dad back! This behavior from a man who claims he "doesn't like dessert." That's saying something.
FOR THE BASE AND STREUSEL-
1 1/2 C all purpose flour
1/2 C Sugar
1/2 tsp. baking powder
1/2 tsp. salt
1 stick cold unsalted butter, cubed
1/3 C almond paste
1/4 tsp. pure almond extract
FOR THE FILLING
1 1/2 C frozen Saskatoon Berries
3/4 C sugar
3 Tbsp. water
2 Tbsp. cornstarch
1 Tbsp. fresh lemon juice
1 Tbsp. unsalted butter
FOR THE TOPPING-
1/2 C sliced almonds
PROCEDURE-
1. Preheat oven to 350 degrees. Coat a 9-inch square baking pan with nonstick spray
2. STIR flour, 1/2 C sugar, baking powder, and 1/2 tsp. salt together in a bowl for the base of the streusel. Add cubed butter, almond paste, and extract; cut in with a pastry blender or two knives until sandy. Remove and reserve 1 C for the streusel.
3. SPRINKLE remaining mixture into the prepared pan and press evenly over the bottom. Use a measuring cup to tamp down the base. Bake 15-18 minutes, or until crust just begins to brown just at the edges. Remove from oven; leave on.
4. SIMMER Saskatoons, 3/4 C sugar, water, cornstarch, lemon juice, 1 Tbsp. butter, and salt for the filling in a sauce pan over medium heat. Cook until mixture thickens and turns translucent, about 8 minutes. Spread filling over baked base.
5. SPRINKLE WITH reserved streusel mixture and sliced almonds. Bake until filling is bubbly and streusel is lightly browned, about 30 minutes. Cool completely and cut into bars.
